Crunchie Cheesecake

As you know, my Sister arrived home from her travels last week. A few days before her arrival she asked if I would make her a Crunchie cheesecake when she got home. I had never made a cheesecake before, so was a little hesitant and first. But then I thought, well it's for a special occasion so why not! 

So, who would like to know how to make it?! I promise it is very easy, you just need to have a little patience as it takes a couple of days including the chilling time. 


For the base...

2 Crunchie bars 
150g digestive biscuits
50g chocolate chips
100g butter 
for the cheesecake...
400g cream cheese
175ml double cream
100g icing sugar
1 teaspoon vanilla extract
for the chocolate sauce...
50g milk chocolate
40g butter
40ml double cream
to decorate... 
2 Crunchie bars 
Line a 23cm springform tin with greaseproof paper. Put the Digestive biscuits into a mixer and blend until fine crumb consistency. Tip into a bowl, add the chocolate chips and stir. Roughly chop the Crunchie into medium, small and crumb pieces. Stir into your digestive mix. In a saucepan, melt the butter, then pour into your digestive mix and stir until it has covered all of the mix. 
Press the mix into the springform tin, pressing down with the back of a spoon. Place in the fridge to set for a couple of hours. 
Next mix together the cream cheese, vanilla extract and the icing sugar until smooth. Add the cream and mix again until all incorporated. Place the cream cheese mix on top of your digestive base, smooth with a spatula and leave to set in the fridge overnight.

Release from the pan, and gently move onto a serving plate/cake stand.

To make your chocolate sauce, put the chocolate and butter into a pan and gently heat until melted together, stirring constantly. Take off of the heat and add the cream. Pour over the cheesecake.
Lastly roughly chop you Crunchie bars and sprinkle them over the top. 
Leave to set in the fridge for about an hour and serve! 

OH. MY. GOSH. I can confirm that this cheesecake is seriously scrummy! My Sister loved it and was very happy that I made it!
