Spring time biscuits



Recently I was sent a lovely little package from Cake Angels. With lots of goodies to help us decorate our bakes! I have baking on my mind every day, and Millie is really following in her Mummy's foot steps because she asks if we can bake almost daily!

I love baking by myself and find it really relaxing, it's my time to chill out. However, when the children are so enthusiastic it is really hard to leave them out! Millie prefers the baking (and the eating) and Chester normally prefers the decorating, so between us we make a great baking team haha! 

Over the weekend we had some really lovely weather, it was the first time it truly felt as if Spring was just around the corner! Inspired by that we decided to bake some spring biscuits, using some of our Cake Angels toppings to decorate them! 











Ingredients: 
150g plain flour
100g softened butter
60g caster sugar
Grated rind of one lemon
Juice of one lemon 
Icing sugar

Method: 
Because Millie was helping with this bake I weighed the ingredients and put them into separate jugs and pots so that she could just tip them into the big bowl herself. I find that she responds so well to being given a little bit of responsibility so I encourage it as much as I can! 

We put the flour, butter, sugar and rind into the bowl and then used our fingers to rub together until the mixture started to come together into a dough. Then we tipped in 3 quarters of the lemon juice into the mix (putting the remaining quarter to one side for the icing). Gave the mix a stir, it was a little sticky so we added a very small amount of flour.


We then rolled the dough out on a lightly floured surface to about 1cm thick. We used flower shaped cookie cutters to cut out our biscuits, but you can use whatever cutters you would like! This amount should make around 16 biscuits.


We placed the flower shaped cookies onto a baking sheet (which was lined with grease proof paper) and baked at 180 degrees for 15 minutes or until the biscuits are only just getting some colour on them! 

Leave to cool on a wire rack.

Whilst cooling mix together some icing sugar with the remaining lemon juice and a little bit of water until you have a thick paste. 

Spread the icing onto the biscuits and then decorate! We used the Cake Angels seasonal fun spring sprinkles and the Cake Angels mini marshmallows for ours!


We made them whilst Chester was at School, so we made sure we left some for Chester to decorate, he decided that he wanted to use the chocolate passion pot of decorations for his! 

Half way through decorating he decided he would prefer to sprinkle them on some ice cream instead! Cheeky monkey!


Next on my list of baking is going to be some kind of cake so that I can try out the vanilla frosting tub... Watch this space!
