Caramel surprise cupcakes

I really love chocolate, I really love cake, and I really love surprises. So I thought why not put all three together to make a really awesome cupcake?! 

Ingredients:

100g caster sugar
100g butter
100g self raising flour
1 tsp baking powder
2 eggs

1 tub of cake angels (or similar ready made icing)
1 pack of Galaxy caramel mini eggs

Makes 8 generous sized cupcakes.

Method:

Put the galaxy caramel eggs into the freezer the night before you intend to make the cupcakes.

Put the sugar, butter, flour, baking powder and eggs in a bowl and whisk them together. 

Line a muffin tin with 8 cupcake papers, then spoon some mix into each one, filling half way. Then get your mini eggs out of the freezer and place them in the middle of your cupcakes. Top off with a little more mix so that the eggs are covered and pop into the oven on 180 degrees for 18 minutes. 

                      

Once cooled pipe on some buttercream icing and your done! 

     

We decorated ours with Chocolate curls and some cute little Easter signs we had. 

I cut mine in half so that you can see the results..

     

But it is even better when your guest doesn't know that the ordinary looking cupcake has a yummy caramel surprise in the centre!
